¼ cup fine bulgur
1 package (5 ounces) organicgirl© protein greens, finely chopped
1 medium tomato, finely diced
1 can (15 ounces) chickpeas, drained and rinsed
½ cup lightly-packed mint leaves, finely chopped
2 green onions, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons olive oil
½ teaspoon fine sea salt
¼ teaspoon cinnamon
¼ teaspoon black pepper
Pinch cayenne pepper
1. in a small bowl, place bulgur. pour ⅓ cup boiling water over it and let sit 10 minutes. if there is any unabsorbed water after 10 minutes, drain it off.
2. in a large bowl combine bulgur, protein greens, tomato, chickpeas, mint, green onion, lemon juice, oil, salt, cinnamon, pepper, and cayenne.
