ingredients
4 servings
½ cup organicgirlⓇ tropical ginger dressing, or to taste
8oz flat rice stick noodles (pad thai noodles)
½ red onion, sliced paper thin
2 medium carrots, cut into matchsticks
¾ cup fresh mint leaves
¾ cup fresh cilantro leaves
½ cup fresh thai basil leaves
2 red thai chiles, thinly sliced
½ cup coarsely chopped roasted peanuts
directions
1. in a large saucepan bring 4 quarts water to a boil. add noodles, simmer 5 minutes, then drain well and rinse under cold water.
2. drain again and transfer to a large bowl. immediately add dressing to noodles and toss well to coat.
3. place sliced onions in a sieve and run hot tap water over them for 1 minute. drain well and transfer to bowl with noodles. add carrots, mint, cilantro, basil, chiles, and peanuts. toss everything together.
4. taste noodles and add more dressing if desired.
