SUPER SPINACH! and mushroom salad

our kale parmesan dressing and homemade rye croutons combine with mushrooms in this salad to pack a spicy cheesy flavor!

2 slices rye bread, cut into ½” cubes
1 tablespoon extra-virgin olive oil
1 package of organicgirl© SUPER SPINACH!
4 ounces button mushrooms, thinly sliced
¼ red onion, thinly sliced
¼ cup of kale parmesan dressing


preheat oven to 375°F.

on a large baking sheet, toss bread cubes with oil and a sprinkle of salt, and arrange in a single layer. bake until lightly browned, about 12-15 minutes.

in a large bowl, toss greens, mushrooms, and onions with dressing and arrange on plates. top with croutons.
