PEPPERGREENS lemon garlic shrimp salad

a garden fresh, colorful salad with a slight peppery kick! our PEPPERGREENS and fresh tomato italian dressing combine to make this lemon, garlic shrimp salad your new go to favorite!



3-4 servings

4 ounces organicgirl© PEPPERGREENS
1 tablespoon extra virgin olive oil
4 garlic cloves, minced
1 pound shrimp, peeled and deveined
2 tablespoons freshly squeezed lemon juice
salt and pepper, to taste
¾ cup chopped red onion
1 cup of grape tomatoes, halved
1 ripe avocado, pitted and chopped into small pieces
1 large cucumber, chopped
½ cup fresh tomato italian dressing


to cook the shrimp, heat a large nonstick skillet over medium heat. add olive oil and garlic and cook for 30 seconds. add shrimp to the pan in a single layer. cook, undisturbed for about 2 minutes. turn the shrimp over, add the lemon juice and cook until the shrimp is cooked throughout, about 1 to 2 additional minutes. season with salt and pepper.

to assemble the salad, divide the PEPPERGREENS, onion, tomatoes, avocado, and cucumber between salad bowls and top with cooked shrimp. Serve immediately with tomato italian dressing, as desired.
