2 packages of organicgirl© mache blend
1 cup of frozen green peas
1 tablespoons of vegetable stock
1 cup of frozen artichoke hearts, defrosted
1 shallot minced
2 tablespoons of toasted pine nuts, chopped
2 cloves of garlic, minced
2 teaspoons of fresh dill
1 cup of zucchini, diced
zest of 1 lemon
in a large saute pan over medium high heat, add the vegetable stock, shallot, and garlic and stir until translucent, about 5 minutes.
stir in zucchini, green peas & artichoke hearts and cook about 3 minutes. working in small batches, add the mache blend until lightly wilted.
transfer to a serving dish and garnish with toasted pine nuts, fresh dill and lemon zest.
