½ cup of beluga or green lentils, rinsed and drained
1 shallot, diced
¼ cup of minced parsley
½ cup of fresh rustic dressing, divided
½ teaspoon of sea salt

1 cup of cherry tomatoes, halved
½ medium cucumber, seeded and cubed
in a medium saucepan, bring 1 cup water, lentils, and shallot to a boil. cover and reduce heat to medium-low. gently simmer until lentils are tender but still firm, about 20-25 minutes. stir in parsley, ¼ cup dressing, and salt into the hot lentils. spread onto a plate and let cool completely.
in a large bowl, toss greens, lentils, and tomatoes with ¼ cup dressing and arrange on plates. garnish with a sprig of parsley if desired.
