1/4 cup of fresh squeezed orange juice
3 baby golden beets
1 tablespoon of dijon mustard
1 medium blood orange
1 tablespoon apple cider vinegar
1 small red grapefruit
1/2 teaspoon of coarse black pepper
2 tablespoons of chopped pistachios
preheat oven to 400° degrees and peel the beets. cut them in quarters and place on a baking sheet lined with parchment paper. bake for 40 minutes until tender.
cut the citrus fruits, making sure to remove the pith and slice into round segments.
plate the mache blend on a serving dish and top with orange and grapefruit slices, beets and pistachios.
whisk together the orange juice, mustard, vinegar and black pepper, then drizzle over salad.
