ingredients
4 servings
½ cup organicgirlⓇ bleu cheese dressing, plus more for serving if desired
2 tablespoons olive oil
1 large onion, thinly sliced
1 tablespoon balsamic vinegar
1 baguette
1 honeycrisp apple, cored and thinly sliced
½ cup crumbled blue cheese
directions
1. preheat oven to 400℉.
2. in a large skillet heat oil over medium heat. add onion and cook, stirring occasionally, until very soft and browned, about 15 minutes. if needed, reduce the heat to prevent them from burning. take off heat and stir in vinegar.
3. cut baguette crosswise in half. cut each length of baguette in half lengthwise and lay cut side up on a large baking sheet.
4. spread each piece of baguette with 2 tablespoons dressing. top with sautéed onions, apple, and blue cheese.
5. bake until browned and crisp, about 15 minutes. if desired, drizzle with a little more dressing.
