½ cup organicgirl© avocado cilantro dressing
1 cup black rice
½ teaspoon fine sea salt
4 sheets toasted nori
1 tablespoon wasabi paste
1 tablespoon toasted sesame seeds
2 carrots, peeled and cut into matchsticks
1 medium, ripe avocado, pitted and thinly sliced
1 medium cucumber, peeled and sliced into ¼” thick strips
directions
1. in a medium saucepan combine rice, salt, and 1¾ cups water. bring to a boil, then reduce heat to low, cover, and simmer until tender, about 35 minutes.
2. transfer rice to a bowl and allow to cool, stirring occasionally, until steam stops coming off rice, about 10 minutes.
3. on a clean, dry counter lay out nori sheets. place ½ cup rice on each sheet and spread out, leaving a 1” border on one side. spread a very thin line of wasabi down the center of rice. sprinkle with sesame seeds. place carrots, avocado, and cucumber in a line down the center of the rice. roll up each nori sheet as compact as possible and place seam-side down as you prepare the rest of the rolls.
4. to serve, cut rolls into 8 pieces each, and drizzle with dressing.
